Ingredients

  • 2 to 3 lb deer meat
  • 1/2 lb salt pork
  • 1 cup flour
  • 1 1/2 cups water
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 bay leaf
  • 4 carrots, pared
  • 4 turnips, pared
  • 4 potatoes, pared
  • 6 small onions

Instructions

  1. Wipe the deer meat with a damp cloth and coat it with three-quarters of the salt pork.
  2. Rub the meat with flour, salt, and pepper.
  3. Fry the remaining salt pork in a kettle and brown the meat in this fat.
  4. Remove the meat and brown 2 tablespoons of flour in the kettle.
  5. Place the meat on a low rack in the kettle.
  6. Add water, salt, pepper, and the bay leaf to the kettle.
  7. Cover the pan and simmer until the meat is nearly tender, about 45 minutes.
  8. Add the carrots, turnips, potatoes, and small onions around and over the meat, and continue cooking until the vegetables are tender.
  9. Serve the roast surrounded with the vegetables.
  10. Thicken the gravy if necessary and serve with the meat.
  11. Add dumplings 15 minutes before the vegetables are tender, if desired.
