Deer Pot Roast

- Wipe the deer meat with a damp cloth and coat it with three-quarters of the salt pork.
- Rub the meat with flour, salt, and pepper.
- Fry the remaining salt pork in a kettle and brown the meat in this fat.
- Remove the meat and brown 2 tablespoons of flour in the kettle.
- Place the meat on a low rack in the kettle.
- Add water, salt, pepper, and the bay leaf to the kettle.
- Cover the pan and simmer until the meat is nearly tender, about 45 minutes.
- Add the carrots, turnips, potatoes, and small onions around and over the meat, and continue cooking until the vegetables are tender.
- Serve the roast surrounded with the vegetables.
- Thicken the gravy if necessary and serve with the meat.
- Add dumplings 15 minutes before the vegetables are tender, if desired.
