Ingredients

  • 2 cups flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon chili powder
  • 1/2 cup butter, diced
  • 2 ounces finely grated Cheddar cheese
  • 3 tablespoons cold water
  • 6 slices bacon, chopped
  • 1 medium onion, chopped
  • 4 ounces flaked crabmeat
  • 3 eggs
  • 2/3 cup half and half
  • 1/2 teaspoon mustard powder

Instructions

  1. Preheat oven to 400°F.
  2. In a mixing bowl, combine flour, salt, and chili powder.
  3. Cut in diced butter until mixture resembles bread crumbs.
  4. Add grated Cheddar cheese and mix well.
  5. Add cold water and mix to form a fairly firm dough.
  6. Knead gently on a floured surface and roll out to fit a 10-inch flan pan with a removable bottom.
  7. Press pastry into the pan and trim the edges.
  8. Prick the base with a fork and bake for 15 to 20 minutes until dry and golden brown.
  9. Fry chopped bacon for 3 minutes; add chopped onion and cook an additional 2 minutes.
  10. Remove from heat and mix with flaked crabmeat.
  11. Spoon the crab mixture into the baked pastry crust.
  12. In a bowl, whisk eggs, half and half, mustard powder, and cayenne pepper.
  13. Pour the egg mixture over the crab filling in the pastry shell.
  14. Set the flan pan on a baking sheet.
  15. Bake for 30 to 35 minutes until the filling is set and the top is lightly browned.
  16. Can be served warm or cold, garnished with slices of tomatoes.
