Ingredients

  • 100 oysters
  • 1 bunch celery, chopped fine
  • 1 onion, grated
  • 1 Tbsp. butter
  • 6 toasted crackers, crushed
  • 2 eggs
  • pepper to taste
  • salt to taste

Instructions

  1. Preheat your broiler and prepare an oak plank, one-inch thick and as long and wide as a large platter.
  2. Use the plank for planking or broiling, ideally with thin, flat fish such as mackerel or fish steaks.
  3. Shuck the oysters and set aside.
  4. In a skillet, melt butter over medium heat.
  5. Add the chopped celery and grated onion to the butter and sauté until tender.
  6. Remove from heat and let cool slightly.
  7. In a mixing bowl, beat the eggs until well combined.
  8. Mix the cooked celery and onion with the eggs, crushed toasted crackers, salt, and pepper.
  9. Gently fold in the oysters into the mixture.
  10. Spoon the oyster mixture into oyster shells or a baking dish.
  11. Broil until the mixture is bubbly and lightly browned on top, about 3-5 minutes.
  12. Garnish with parsley and serve hot.
