Devilish Chicken features tender chicken breasts in a tangy, savory sauce with mustard, capers, and white wine, perfect for a flavorful, elegant meal suitable for dinner parties or family dinners.

Ingredients

  • 2 whole chicken breasts (1 lb.)
  • 1 Tbsp. cooking oil
  • 1/3 c. finely chopped onion
  • 1 large clove garlic, minced
  • 1/2 c. dry white wine
  • 1/2 c. chicken broth
  • 1 tsp. cornstarch or flour
  • 1 Tbsp. Dijon mustard
  • 2 tsp. capers, drained
  • salt and pepper
  • fresh chopped parsley for garnish

Instructions

  1. Heat oil in a skillet large enough to hold all the chicken breasts and brown chicken on high heat on both sides.
  2. Season the chicken with salt and pepper.
  3. Reduce heat, cover, and cook for about 10 minutes until the chicken is cooked through inside.
  4. Add a little white wine, if necessary, to prevent sticking.
  5. Remove chicken breasts from skillet and keep warm.
  6. Add a little more oil to the skillet and sauté onion and garlic until the onion is soft and transparent.
  7. Add wine and cook until the wine is slightly reduced.
  8. Add chicken broth and bring to a boil.
  9. Blend cornstarch or flour with 2 tablespoons of chicken broth and add to the sauce, stirring until thickened.
  10. Stir in Dijon mustard and capers.
  11. Spoon sauce over the chicken breasts and sprinkle with chopped parsley.
