Ingredients

  • 8 oz. fresh mushrooms, sliced
  • 1 medium leek onion, sliced
  • 1/2 cup butter
  • 1/2 cup flour
  • 28 oz. chicken broth
  • 1 cup artichoke hearts, drained and quartered
  • 1 teaspoon tarragon
  • 1/2 teaspoon salt
  • 1/2 teaspoon green pepper
  • 2 teaspoons lemon juice

Instructions

  1. Saute mushrooms and sliced leek onion in butter over medium heat until tender.
  2. Add flour, stirring until smooth.
  3. Slowly add chicken broth, stirring constantly.
  4. Add artichoke hearts, tarragon, salt, green pepper, and lemon juice.
  5. Simmer until slightly thickened.
  6. Add cream and heat slowly until warm.
