Ingredients

  • 4 medium potatoes
  • 2 large carrots
  • 2 ribs celery
  • 1 large white onion
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 14 1/2 oz. chicken broth
  • 4 chicken breasts, skinned
  • paprika
  • 1/2 tsp. thyme
  • 1/2 tsp. sage
  • 1/2 tsp. oregano
  • 2 envelopes lite chicken gravy mix
  • 1 c. cold water

Instructions

  1. Clean potatoes, carrots, celery, and onion; cut into 1-inch pieces.
  2. Place vegetables in a roaster; add salt, pepper, and chicken broth.
  3. Quickly brown the chicken breasts; sprinkle with paprika and place on top of the vegetables.
  4. Simmer covered until the chicken and vegetables are tender.
  5. Add herbs: thyme, sage, and oregano.
  6. Blend gravy mix with cold water; add to the simmering stew.
  7. Stir carefully until the gravy thickens and serves.
