Ingredients

  • 3 to 4 lb beef pot roast
  • 1/4 cup flour
  • 3 teaspoons salt
  • 1/4 teaspoon pepper
  • 3 tablespoons oil
  • 1 medium onion
  • 1 teaspoon dill weed
  • 2 tablespoons vinegar
  • 1/2 cup water
  • 1/2 cup coarsely grated carrots

Instructions

  1. Combine 1/4 cup flour with salt and pepper.
  2. Dredge the beef pot roast in the flour mixture.
  3. Brown the roast in oil in a frying pan on the stove.
  4. Place the browned roast in a roaster.
  5. Add sliced onion, dill weed, vinegar, and 1/2 cup water to the roaster.
  6. Cover and cook slowly for 2 hours.
  7. Add coarsely grated carrots and cook for an additional hour.
  8. Remove the meat to a heated platter.
  9. Pour the cooking liquid from the roaster into a saucepan.
  10. Mix 2 tablespoons flour with 1/2 cup water to make a slurry.
  11. Add the flour mixture to the cooking liquid, stirring constantly to thicken.
