A hearty, creamy chowder loaded with potatoes, onions, celery, and Velveeta, perfect for comforting dinners and suitable for family gatherings or casual meals.

Ingredients

  • 4 cups diced potatoes
  • 2 large onions minced
  • 1 cup diced celery
  • 2 teaspoons salt
  • 5 cups boiling water
  • 1 stick margarine
  • 1/2 cup flour
  • 1/2 teaspoon pepper
  • 1 teaspoon salt
  • 1 teaspoon dry mustard
  • 3 teaspoons A.1. sauce
  • 4 cups milk
  • 1/2 pound Velveeta cheese

Instructions

  1. Place diced potatoes, minced onions, diced celery, salt, and boiling water into a large pot.
  2. Simmer until vegetables are tender, about 15 minutes.
  3. In a separate pot, melt margarine to make a roux.
  4. Add flour, seasonings, and milk to the roux, stirring until smooth.
  5. Add Velveeta to the milk mixture and stir until melted and smooth.
  6. Combine the vegetable mixture with the cheese sauce.
  7. Add parsley and tomatoes to the chowder.
  8. Heat to the desired temperature and adjust seasonings as needed.
  9. Serve hot, and enjoy the chowder even better the next day.
