Dolmades
Dolmades are flavorful Greek-inspired grape leaf rolls filled with a savory mixture of ground beef, rice, herbs, and dried fruits. These bite-sized delights offer a harmonious blend of tangy lime, aromatic spices, and crunchy nuts, making them perfect for appetizers or light meals for those who enjoy bold, Mediterranean flavors.
Ingredients
- 1/2 lb. ground beef ⓘ
- 1 onion, chopped fine ⓘ
- 2 cloves garlic, chopped fine ⓘ
- 1 tsp. parsley, chopped fine ⓘ
- 2 tsp. ginger, chopped fine ⓘ
- 1 heaping tsp. curry powder ⓘ
- 1 beaten egg ⓘ
- 1/2 c. currants ⓘ
- 1/2 c. toasted pine nuts or slivered almonds ⓘ
- 1 c. cooked rice ⓘ
- salt and pepper to taste ⓘ
- 1 pt. jar grape leaves in salt brine ⓘ
- juice of 4 limes ⓘ
- 1/4 c. olive oil ⓘ
Instructions
- Mix ground beef, chopped onion, chopped garlic, chopped parsley, chopped ginger, curry powder, beaten egg, currants, toasted pine nuts or slivered almonds, cooked rice, salt, and pepper until well combined.
- Lay out one grape leaf at a time and place 1 to 2 teaspoons of filling at the lower end of the leaf.
- Fold both sides of the leaf into the center and roll from the bottom towards the stem, forming a short, fat cigar shape.
- Place the rolls in a casserole dish, barely covering them with water and one-third of the lime juice.
- Bake covered at 350°F (175°C) for 40 minutes.
- Remove from oven while still hot and add the remaining lime juice and olive oil over the rolls.
- Refrigerate overnight to allow flavors to meld.
- Serve cold.
