Ingredients

  • 1 1/2 cups firmly packed brown sugar
  • 1 cup chopped pecans
  • 1 tablespoon cinnamon
  • 2 cups flour
  • 1 cup sugar
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 package instant vanilla pudding
  • 1 package instant butterscotch pudding
  • 1 cup water
  • 3/4 cup cooking oil
  • 1 teaspoon vanilla
  • 4 eggs

Instructions

  1. Preheat oven to 300°F (150°C).
  2. Grease the bottom of a 13 x 9-inch baking pan.
  3. Combine brown sugar, chopped pecans, and cinnamon, then set aside.
  4. In a large mixer bowl, combine flour, sugar, baking powder, salt, vanilla pudding, butterscotch pudding, water, oil, vanilla, and eggs.
  5. Beat for 2 minutes at medium speed, scraping the bowl occasionally.
  6. Pour half of the batter into the prepared pan.
  7. Sprinkle half of the brown sugar mixture evenly over the batter.
  8. Pour the remaining batter over the first layer.
  9. Sprinkle the rest of the brown sugar mixture on top.
  10. Bake for 40 to 45 minutes, until the top springs back when touched lightly in the center.
