Ingredients

  • 1 cup butter
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 4 eggs
  • 1 1/2 cups molasses
  • 5 cups plain flour
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon ginger
  • 1/2 teaspoon cloves
  • 1 teaspoon nutmeg (optional)
  • 1 teaspoon soda
  • 1 cup buttermilk

Instructions

  1. Cream butter and granulated sugar together until light and fluffy.
  2. Add well-beaten eggs and beat well to combine.
  3. Stir in molasses until fully incorporated.
  4. Mix baking soda into buttermilk and stir well.
  5. Sift together plain flour, baking powder, cinnamon, ginger, cloves, and nutmeg if using.
  6. Add dry ingredients to the creamed mixture, alternating with buttermilk, mixing well after each addition.
  7. Pour 1 cup of batter into each greased and floured round pan.
  8. Bake in a preheated oven at 375°F for about 20 minutes or until a toothpick inserted in the center comes out clean.
  9. Cool the layers on a rack before removing from the pans.
