Easy Chicken Marengo

Ingredients

  • 6 boneless and skinless chicken breasts
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1/2 cup dry white wine
  • 2 cups drained and chopped canned tomatoes
  • 12 mushrooms sliced
  • 1 (2.2 oz) can sliced black olives
  • 1 dried tarragon
  • 1/2 teaspoon pepper
  • 1 small clove garlic
  • salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Combine flour with tarragon, salt, and pepper in a shallow dish. Dip chicken pieces in seasoned flour to coat on all sides.
  3. Heat butter and olive oil in a large skillet over medium heat. Brown chicken pieces a few at a time until golden brown.
  4. Remove chicken from skillet and place in an ovenproof casserole dish.
  5. Add white wine to the skillet and deglaze, scraping up brown particles from the bottom of the pan.
  6. Add drained and chopped tomatoes, sliced mushrooms, sliced black olives, and minced garlic to the skillet. Stir to combine.
  7. Pour the sauce over the chicken in the casserole dish and cover.
  8. Bake in the preheated oven for 35 to 40 minutes until chicken is cooked through.
