Easy Chicken Marengo

Ingredients
- 6 boneless and skinless chicken breasts ⓘ
- 1/2 cup all-purpose flour ⓘ
- 1/2 teaspoon salt ⓘ
- 2 tablespoons unsalted butter ⓘ
- 2 tablespoons olive oil ⓘ
- 1/2 cup dry white wine ⓘ
- 2 cups drained and chopped canned tomatoes ⓘ
- 12 mushrooms sliced
- 1 (2.2 oz) can sliced black olives ⓘ
- 1 dried tarragon ⓘ
- 1/2 teaspoon pepper ⓘ
- 1 small clove garlic ⓘ
- salt and pepper to taste ⓘ
Instructions
- Preheat oven to 350°F (175°C).
- Combine flour with tarragon, salt, and pepper in a shallow dish. Dip chicken pieces in seasoned flour to coat on all sides.
- Heat butter and olive oil in a large skillet over medium heat. Brown chicken pieces a few at a time until golden brown.
- Remove chicken from skillet and place in an ovenproof casserole dish.
- Add white wine to the skillet and deglaze, scraping up brown particles from the bottom of the pan.
- Add drained and chopped tomatoes, sliced mushrooms, sliced black olives, and minced garlic to the skillet. Stir to combine.
- Pour the sauce over the chicken in the casserole dish and cover.
- Bake in the preheated oven for 35 to 40 minutes until chicken is cooked through.
