Edl'S Turkey Pie
A hearty turkey pie with savory mushroom and sage flavors, topped with a golden crust, perfect for comforting family dinners or holiday gatherings.

- Melt butter in a large skillet over medium heat.
- Saute chopped onion and celery for about 5 minutes.
- Add minced parsley, sliced mushrooms, and sage; cook for about 5 minutes.
- Stir in 1/4 cup flour; cook until it bubbles.
- Gradually add 1 3/4 cups stock, stirring to prevent lumps.
- Add 3/4 cup cream and bring to a boil, stirring constantly.
- Simmer for 1 minute.
- Season with salt and pepper to taste.
- Reserve 1 cup of the sauce.
- Add cooked cubed turkey and lemon juice to the remaining sauce.
- Pour the mixture into the pie crust and top with the second crust.
- Bake at 425°F for 10 minutes, then reduce to 350°F and bake for about 35 minutes until crust is golden brown.
- Heat the reserved sauce to serve alongside the pie.
