Ingredients

  • 1 pie crust
  • 1 small onion, chopped
  • 1 stalk celery
  • 2 Tbsp. parsley, minced
  • 6 oz. mushrooms, sliced
  • 2 cups cooked turkey, cubed
  • 6 Tbsp. butter
  • 1 1/4 tsp. sage
  • 1/4 cup flour
  • 1 3/4 cups stock
  • 3/4 cup cream
  • salt and pepper
  • 3/4 tsp. lemon juice

Instructions

  1. Melt butter in a large skillet over medium heat.
  2. Saute chopped onion and celery for about 5 minutes.
  3. Add minced parsley, sliced mushrooms, and sage; cook for about 5 minutes.
  4. Stir in 1/4 cup flour; cook until it bubbles.
  5. Gradually add 1 3/4 cups stock, stirring to prevent lumps.
  6. Add 3/4 cup cream and bring to a boil, stirring constantly.
  7. Simmer for 1 minute.
  8. Season with salt and pepper to taste.
  9. Reserve 1 cup of the sauce.
  10. Add cooked cubed turkey and lemon juice to the remaining sauce.
  11. Pour the mixture into the pie crust and top with the second crust.
  12. Bake at 425°F for 10 minutes, then reduce to 350°F and bake for about 35 minutes until crust is golden brown.
  13. Heat the reserved sauce to serve alongside the pie.
