Eggnog Quick Bread

- Preheat oven to 350°F (175°C). Grease the bottom only of a 9 x 5-inch loaf pan, or three 5 3/4 x 3 1/4-inch loaf pans.
- Beat eggs in a large bowl.
- Blend in sugar, eggnog, melted butter, rum extract, and vanilla.
- In a separate bowl, stir together flour, baking powder, salt, and ground nutmeg.
- Mix the dry ingredients into the eggnog mixture; stir to just moisten dry ingredients.
- Pour batter into the prepared pan or pans.
- Bake in the large pan for 40 to 60 minutes or until a tester inserted in the center comes out clean.
- Breads baked in smaller pans require 35 to 40 minutes.
- Cool for 10 minutes, then remove bread from the pan.
- Cool completely, wrap tightly, and store in the refrigerator.
