Eggplant Pizzas

Ingredients

  • 1 1/2 lb. eggplant
  • 2 eggs
  • 2 c. bread crumbs
  • cooking spray
  • 1 small green pepper
  • 4 oz. mushrooms
  • 2 Tbsp. vegetable oil
  • 2 c. tomato sauce
  • 1 tsp. dried oregano
  • 6 oz. Mozzarella cheese

Instructions

  1. Wash the eggplant, cut off the ends, and slice into 1/3-inch thick slices, leaving the skin on.
  2. Dip each eggplant slice into beaten eggs, then coat with bread crumbs.
  3. Place the breaded eggplant slices on a baking sheet sprayed with cooking spray.
  4. Broil until the crumbs are browned, about 1 minute per side.
  5. Sauté minced green pepper and sliced mushrooms in vegetable oil until tender.
  6. Set the sautéed vegetables aside.
  7. For each eggplant slice, spread a spoonful of tomato sauce and a pinch of oregano on top.
  8. Add the sautéed peppers and mushrooms over the sauce.
  9. Top each with shredded mozzarella cheese.
  10. Broil until the cheese melts, about 1 minute.
