Ingredients

  • 6 large mild onions
  • salted boiling water
  • 1 cup pitted ripe olives
  • 1 cup soft bread crumbs
  • 1/2 cup shredded Cheddar cheese
  • 2 Tbsp minced parsley
  • 1/2 tsp salt
  • 1/2 tsp poultry seasoning
  • 1/8 tsp ground sage
  • dash of fresh ground pepper
  • paprika

Instructions

  1. Peel onions, removing only the thin outer layer, and slice off the tops. Reserve the tops.
  2. Place onions in boiling salted water in a saucepan and simmer for 30 minutes until tender.
  3. Drain the onions and let them cool.
  4. Chop the onion tops to make 1/3 cup of finely chopped onions.
  5. Saute the chopped onion tops in butter until golden.
  6. Chop the olives; add bread crumbs, parsley, salt, poultry seasoning, sage, and pepper; toss to combine.
  7. Carefully scoop out the center portions of the onions, reserving and chopping the centers for other uses.
  8. Do not cut through the bottom of the onion shells.
  9. Fill each onion shell with the prepared stuffing.
  10. Sprinkle the stuffed onions with paprika.
  11. Bake, covered, at 350°F (175°C) for 20 minutes.
  12. Uncover and bake for an additional 10 minutes.
