Ingredients

  • 1.5 to 2 lb. cubed beef
  • 2 Tbsp. oil
  • 2 onions, peeled and halved
  • Salt and pepper
  • 1 1/2 cups water
  • 1 can stewed tomatoes
  • 1 marrow or knuckle bone
  • 1 can beef broth
  • 3 sliced carrots
  • 2 ribs celery, coarsely sliced
  • 3 large potatoes, in bite-sized chunks
  • 1 small can tomato sauce
  • 5 Tbsp. barley

Instructions

  1. Brown the beef in oil in a large pot.
  2. Add the onions, salt, and pepper; then pour in water to cover the ingredients.
  3. Add the stewed tomatoes and marrow or knuckle bone.
  4. Simmer the mixture for about 1 1/2 to 2 hours.
  5. Add the beef broth, carrots, celery, potatoes, and tomato sauce.
  6. Cook on low heat until the vegetables are tender, about 20 minutes to 30 minutes.
  7. Add the barley and parsley, then simmer the soup.
  8. Adjust the liquid with more beef broth, tomato sauce, or water to taste.
  9. Serve hot with fresh sour rye bread.
