Elva'S "Captain'S Soup"
Ingredients
- 1 Tbsp. oil or margarine ⓘ
- 1 medium onion, chopped ⓘ
- 1 lb. ground beef ⓘ
- 5 or 6 fresh mushrooms, sliced ⓘ
- 1 (24 oz.) can V-8 juice ⓘ
- 1 can cream of celery soup (undiluted) ⓘ
- 1 can cream of mushroom soup (undiluted) ⓘ
- 1 large potato, diced ⓘ
- 1 (10 oz.) box frozen mixed vegetables ⓘ
- 1 tsp. Worcestershire sauce ⓘ
- 1 pinch dried sweetened basil ⓘ
Instructions
- Cook chopped onion in oil or margarine in large pan until soft.
- Add beef and mushrooms.
- Cook, stirring until all pink has left meat.
- Add three cans and stir until smooth.
- Add frozen vegetables, potato and seasonings.
- Bring to boil and simmer for 1/2 hour, stirring occasionally.
- Serve as main dish with fresh bread.
- Enjoy!
