Ingredients

  • 1 c. butter flavored shortening
  • 1 1/2 c. light brown sugar
  • 3 eggs
  • 3 c. flour, sifted
  • 1 tsp. soda
  • 1/2 tsp. salt
  • 2 tsp. cinnamon
  • 1/2 tsp. cloves
  • 1/2 tsp. allspice
  • 1/2 c. buttermilk
  • 6 c. pecans, chopped
  • 2 c. dates, diced
  • 1 lb. candied cherries, chopped
  • 6 slices candied pineapple, chopped

Instructions

  1. Cream the butter flavored shortening and light brown sugar together.
  2. Beat in the eggs until well combined.
  3. Add the sifted flour, soda, salt, cinnamon, cloves, and allspice to the mixture.
  4. Stir in the buttermilk until the batter is smooth.
  5. Pour the batter over the chopped pecans, diced dates, chopped candied cherries, and chopped candied pineapple; mix thoroughly.
  6. Drop spoonfuls of the batter onto a baking sheet.
  7. Bake at 325°F (163°C) for 20 to 25 minutes until golden brown.
