Ingredients

  • 3 small overripe bananas
  • 2 eggs
  • 1 tsp vanilla
  • 2 Tbsp honey
  • 1/2 c. skim milk
  • 4 Tbsp raisins
  • 1 Tbsp chopped walnuts
  • 2 unpeeled golden Delicious apples
  • 2 tsp apple pie spice
  • 1 tsp baking soda
  • 2 c. self-rising flour

Instructions

  1. Combine bananas, eggs, vanilla, spice, honey, and milk in a mixing bowl.
  2. Beat until smooth and well blended.
  3. Stir baking soda into the sifted self-rising flour.
  4. Add the flour mixture to the banana mixture, stirring gently.
  5. Fold in chopped walnuts, raisins, and shredded apples.
  6. Pour the batter into a greased loaf pan.
  7. Bake at 375°F (190°C) for 40 minutes or until a toothpick inserted in the center comes out clean.
  8. Remove from oven and serve warm.
