Ingredients

  • 4 or 5 large potatoes, peeled
  • water
  • salt
  • 3 to 4 green onions, sliced
  • 2 cloves garlic, minced
  • 2 Tbsp. butter or margarine
  • 3/4 c. hot milk
  • 2 egg yolks
  • dash of black pepper
  • dash of nutmeg
  • 3 Tbsp. chopped parsley
  • 1/2 c. diced Mozzarella cheese
  • 1 smoked sausage, sliced
  • 2 Tbsp. Parmesan cheese
  • 1 tsp. dried thyme or sage leaves

Instructions

  1. Cut potatoes into cubes.
  2. Place in a large saucepan and cover with water.
  3. Add a dash of salt and bring to a boil.
  4. Cover and simmer for about 20 minutes, until potatoes are tender.
  5. Drain the potatoes.
  6. Mash the potatoes until smooth.
  7. Add sliced green onions and minced garlic to the mashed potatoes and mix well.
  8. Add butter, hot milk, egg yolks, black pepper, and nutmeg to the mixture.
  9. Whip until light and fluffy.
  10. Stir in chopped parsley.
  11. Fold in diced mozzarella cheese, sliced sausage, and grated Parmesan cheese.
  12. Spoon the mixture into a buttered ovenproof dish.
  13. Sprinkle with dried thyme or sage leaves.
  14. Arrange some sausage slices on top.
  15. Broil until light browned and hot, about 5 to 7 minutes.
