Ingredients

  • 1 (1 lb.) can small white beans
  • 1 (12 oz.) can solid packed tomatoes
  • 1 green pepper, chopped
  • 2 small onions, chopped
  • 3 Tbsp. parsley, chopped
  • 1 bay leaf
  • 1 clove garlic, chopped
  • 1/2 tsp. oregano
  • salt and pepper
  • 1 1/2 lb. ground beef
  • 3 to 4 carrots, sliced

Instructions

  1. Rinse and soak the beans overnight.
  2. Add bay leaf, garlic, salt, and pepper to the soaked beans.
  3. Simmer the beans for several hours or until tender.
  4. Saute chopped onions and green pepper until softened.
  5. Add chopped tomatoes and cook for several minutes.
