Ingredients

  • 2 lb. ground beef
  • 1 medium onion, chopped
  • 1 can black beans, rinsed and drained
  • 1-2 tbsp. chili powder
  • 2-3 tsp. ground cumin
  • 1/2 tsp. salt
  • 4 flour tortillas
  • 1 can cream of mushroom soup
  • 1 can diced tomatoes
  • 1 small can green chilies, undrained
  • 1 cup shredded cheddar cheese

Instructions

  1. Cook the hamburger in a skillet until no longer pink, then drain excess fat.
  2. Add chopped onion, rinsed and drained black beans, chili powder, cumin, and salt to the meat; mix well.
  3. Transfer the meat mixture to a 9x13 inch baking dish.
  4. Arrange flour tortillas over the top of the meat mixture.
  5. In a bowl, combine the cream of mushroom soup and diced tomatoes, then pour this mixture over the tortillas.
  6. Sprinkle shredded cheddar cheese evenly over the top.
  7. Bake uncovered at 350°F (175°C) for 25 to 30 minutes until hot and bubbly.
