Ingredients

  • 10 oz. frozen chopped spinach
  • 4 oz. fresh sliced mushrooms
  • 1 lb. fish fillets
  • 1 cup 1% milk
  • 2 Tbsp. flour
  • 1/2 tsp. salt
  • 1/2 tsp. tarragon leaves
  • 2 Tbsp. low-fat margarine
  • 1 Tbsp. lemon juice
  • 1/4 cup Parmesan cheese
  • paprika

Instructions

  1. Microwave spinach in a 1 1/2-quart casserole for 5 to 6 minutes on High; drain.
  2. Layer sliced mushrooms and fish fillets over the spinach.
  3. In a bowl, combine milk, flour, salt, and tarragon; mix well.
  4. Add low-fat margarine to the mixture.
  5. Microwave the mixture for 2 to 3 minutes on High or until it boils and thickens.
  6. Stir in lemon juice.
  7. Pour the sauce over the fish and spinach.
  8. Sprinkle with Parmesan cheese and paprika.
  9. Cover and microwave for 7 to 10 minutes on High or until the fish flakes.
