Ingredients

  • 1 1/2 c. flour
  • 3/4 c. flax meal
  • 3/4 c. oat bran
  • 1 c. brown sugar
  • 2 tsp. baking soda
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 2 tsp. cinnamon
  • 1 1/2 c. shredded carrots
  • 2 peeled shredded apples
  • 1/2 c. raisins
  • 1 c. chopped nuts
  • 3/4 c. milk
  • 2 beaten eggs
  • 1 tsp. vanilla
  • 2 Tbsp. vegetable oil

Instructions

  1. Preheat oven to 375°F (190°C) and prepare muffin tins with liners or non-stick spray.
  2. In a large mixing bowl, combine flour, flax meal, oat bran, brown sugar, baking soda, baking powder, salt, and cinnamon.
  3. Add shredded carrots, shredded apples, raisins, and chopped nuts to the dry ingredients and mix well.
  4. In a separate bowl, whisk together milk, beaten eggs, vanilla, and vegetable oil.
  5. Pour the wet ingredients into the dry ingredients and stir until just combined.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 20 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow muffins to cool slightly before removing from the tin and serving.
