- 3/4 c. flax meal ⓘ

- 2 peeled shredded apples ⓘ

- 3/4 c. milk ⓘ
- 2 beaten eggs ⓘ

Instructions
- Preheat oven to 375°F (190°C) and prepare muffin tins with liners or non-stick spray.
- In a large mixing bowl, combine flour, flax meal, oat bran, brown sugar, baking soda, baking powder, salt, and cinnamon.
- Add shredded carrots, shredded apples, raisins, and chopped nuts to the dry ingredients and mix well.
- In a separate bowl, whisk together milk, beaten eggs, vanilla, and vegetable oil.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Divide the batter evenly among the muffin cups.
- Bake for 20 minutes or until a toothpick inserted into the center comes out clean.
