  • 3 Tbsp. oil

  • 2 c. water
  • 1 Tbsp. flour
  • 1 c. cream
  • 1 Tbsp. tomato puree

Instructions

  1. Dice bacon and sauté with finely chopped onion and a crushed garlic clove.
  2. Add diced carrot and gherkin, season, and cook until softened.
  3. Spread the mixture on each sliced piece of beef, roll tightly, and tie with kitchen string.
  4. Heat oil (and a touch of butter) in a pan and brown the rolls on all sides.
  5. Add red wine and water, cover, and simmer on low heat for about 45 minutes.
  6. Stir in tomato puree, a slurry of flour and cold water, and cream; cook for a few more minutes until the sauce thickens.
  7. Slice the rolls, plate, and serve with mashed potatoes.
