Ingredients

  • 1 1/4 cups all-purpose flour
  • 1 cup Nabisco 100% bran
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 3/4 cup butter or margarine, melted
  • 1/2 cup granulated sugar
  • 3 eggs, slightly beaten
  • 1/4 cup applesauce
  • 1 cup peeled and diced apple
  • 1/2 cup grated Cheddar cheese
  • 1/2 cup chopped walnuts
  • 6 thin apple slices

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease a 9 x 5 x 3-inch loaf pan.
  3. In a small bowl, combine flour, Nabisco 100% bran, baking powder, and baking soda; set aside.
  4. In a large mixing bowl, melt the butter or margarine.
  5. Add granulated sugar and slightly beaten eggs to the melted butter and mix well.
  6. Stir in applesauce.
  7. Fold in diced apples, grated Cheddar cheese, chopped walnuts, and apple slices.
  8. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  9. Pour batter into the prepared loaf pan.
  10. Bake in the preheated oven for approximately 50 minutes, or until a toothpick inserted into the center comes out clean.
  11. Allow to cool slightly before removing from pan and serving.
