French Beef Au Gratin

Ingredients

  • 1/2 cup margarine
  • 4 cups thinly sliced Vidalia or white onions
  • 1 pound beef tenderloin, cut in 1/2-inch cubes
  • 3 tablespoons flour
  • 1 tablespoon brown sugar
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 quart beef broth
  • 2 cups cooked fettuccine

Instructions

  1. Melt margarine in a pan and saute onions for 15 to 20 minutes until caramelized.
  2. Remove onions from the pan and brown the beef tenderloin cubes well.
  3. Return the onions and any juices to the pan with the beef.
  4. In a small bowl, mix flour, brown sugar, cumin, salt, and pepper. Add to the pan and stir for 1 minute until bubbly.
  5. Gradually add beef broth, stirring to scrape up drippings from the pan.
  6. Simmer the mixture for 10 minutes.
  7. Preheat the broiler.
  8. Divide 1/2 cup of cooked fettuccine into each of four 16-ounce bowls.
  9. Divide the beef mixture over the pasta in each bowl.
  10. In a bowl, mix cheeses together and sprinkle evenly over the beef.
  11. Broil about 5 minutes until the cheese is melted and lightly browned.
