Ingredients

  • 1.5 to 2 lb. top sirloin steak
  • 2 medium-sized onions
  • 1 carrot
  • 2 cloves garlic
  • 8 Tbsp. butter
  • 2 Tbsp. olive oil
  • 1/2 cup dry white wine
  • 2 cups beef broth
  • 2 Tbsp. flour
  • 15 oz. can tomato sauce or puree
  • 12 small onions
  • 1/2 lb. mushrooms
  • bouquet garni (thyme, rosemary, marjoram, basil, peppercorns, bay leaves tied in cheesecloth)
  • fried sourdough bread
  • 1 tsp. chopped parsley
  • juice of 1/4 lemon

Instructions

  1. Heat 4 tablespoons of butter and the olive oil in a saute pan.
  2. Cut the steak into cubes, and quarter the onions and carrot, then sauté for 5 minutes.
  3. Season with salt and freshly ground pepper. Sprinkle with flour and blend.
  4. Allow the meat and vegetables to color slightly; then add crushed garlic and stir.
  5. Pour in the white wine and reduce by two-thirds.
  6. Add tomato sauce or puree to the pan.
  7. Place the bouquet garni (with thyme, rosemary, marjoram, basil, peppercorns, and bay leaves tied in cheesecloth) into the pan.
  8. Add enough beef broth to cover the meat and bring to a boil.
  9. Cover and simmer very gently for 1 hour.
  10. While the stew simmers, scald the small onions, drain, dry, and cook in 1 tablespoon butter until golden.
