Ingredients

  • 6 cups water
  • 1 carrot, chopped
  • 1 zucchini, chopped
  • 2 stalks celery, chopped

  • 1 cup noodles
  • 1 can kidney beans (with juice)
  • 2 tomatoes, chopped or 1 lb. can tomatoes (undrained)
  • grated Cheddar cheese
  • parsley leaves
  • basil leaves

Instructions

  1. Bring 6 cups of water to a boil and chop the vegetables: carrot, zucchini, celery, potato, and green beans.
  2. Saute mashed garlic in olive oil, butter, or margarine for 1 minute, then add the chopped vegetables and saute lightly.
  3. Drop the noodles into the boiling water while vegetables are sauteing.
  4. Pour the canned kidney beans with juice into the boiling noodles.
  5. Add the cooked vegetables to the stock with the noodles and beans.
  6. Chop parsley and basil leaves together and add to the soup.
  7. Add chopped tomatoes or canned tomatoes with juice to the soup.
  8. Stir in grated Cheddar cheese, salt, and pepper to taste.
  9. Simmer the soup for 10 to 15 minutes before serving.
