Ingredients

  • 1 (3 lb.) chicken, cut up
  • 1 Tbsp. shortening
  • 1 (8 oz.) can small whole onions, drained
  • 1/2 cup coarsely chopped carrots
  • 1 clove garlic, crushed
  • 2 Tbsp. snipped parsley
  • 1/4 tsp. dried thyme, crushed
  • 1 (2 oz.) can sliced mushrooms
  • 1 cup Sauterne
  • 2 or 3 celery stalks, cut up

Instructions

  1. In a skillet, brown the chicken in hot shortening.
  2. Season the chicken with salt and pepper.
  3. Place the browned chicken in a 2-quart casserole dish.
  4. Drain excess fat from the skillet.
  5. Add the small onions, chopped carrots, crushed garlic, sliced mushrooms, and Sauterne to the skillet.
  6. Heat the mixture, scraping up browned bits from the bottom of the skillet.
  7. Pour the mixture over the chicken in the casserole.
  8. Tuck in the celery pieces and bay leaf around the chicken.
  9. Cover and bake at 350°F (175°C) for 1 hour and 15 minutes.
  10. Remove the bay leaf and celery before serving.
