Ingredients

  • 1/4 cup butter or margarine
  • 1 cup packed light brown sugar
  • 2 eggs
  • 3 cups all-purpose flour
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 1/2 teaspoon grated fresh lemon rind
  • 3/4 cup chopped walnuts
  • 1 teaspoon nutmeg
  • 1 cup grated pared apple
  • 3/4 cup buttermilk

Instructions

  1. In a large bowl, cream butter and sugar.
  2. Beat in eggs.
  3. Mix together flour, baking soda, salt, lemon rind, nuts, spices, and grated apple.
  4. Alternately blend the dry mixture with buttermilk into the creamed mixture.
  5. Pour the batter into a greased and floured 9 x 5-inch loaf pan.
  6. Bake in a preheated 350°F (175°C) oven for 1 hour.
  7. Cool the loaf for 10 minutes, then remove from the pan and cool on a wire rack.
