Ingredients

  • 1 lb sliced zucchini
  • 1 large carrot shredded
  • 1 large chopped onion
  • 3/4 cup chopped celery
  • 1/2 medium green pepper cut into strips
  • 1/2 teaspoon garlic
  • 1/2 teaspoon basil
  • 1/2 cup salsa
  • 2 large tomatoes chopped

Instructions

  1. Heat oil in a large skillet over medium heat.
  2. Add sliced zucchini, shredded carrot, chopped onion, chopped celery, green pepper strips, garlic, and basil.
  3. Cook covered for about 5 minutes until vegetables are crisp-tender, stirring occasionally.
  4. Add chopped tomatoes and salsa, and cook for an additional 2-3 minutes until heated through.
