Ingredients

  • 1 1/2 cups flour
  • 1 1/2 cups cornmeal
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 1/4 cup sugar
  • 6 tablespoons grated cheese
  • 1/4 cup chopped green pepper
  • 1/4 cup chopped onion
  • 6 tablespoons oil
  • 4 teaspoons chili powder
  • 1 1/2 cups milk
  • 2 eggs

Instructions

  1. Sift dry ingredients except chili powder into a large bowl.
  2. Add chopped green pepper, chopped onion, and grated cheese to the dry mixture.
  3. In a heavy skillet, heat oil and stir in chili powder.
  4. Cool slightly, then add milk and slightly beaten eggs.
  5. Stir the wet mixture into the dry ingredients until well blended.
  6. Return the mixture to the skillet and bake at 400°F for 35 minutes.
  7. Cut into wedges and serve hot.
