Fudge Pecan Ripple Layer Cake

- 1 (8 oz.) package cream cheese, softened ⓘ
- 2 Tbsp. butter or margarine, softened ⓘ
- 1 Tbsp. cornstarch ⓘ
- 1 (14 oz.) can sweetened condensed milk ⓘ
- 1 large egg ⓘ
- 2/3 cup butter, softened ⓘ
- 5 3/4 cups sifted powdered sugar ⓘ
Instructions
- Grease 2, 9-inch round cake pans; line with wax paper.
- Grease and flour the wax paper; set aside.
- Prepare the cake batter by mixing shortening and sugar, then add eggs and vanilla.
- Combine flour, cocoa, baking soda, and salt; gradually add to creamed mixture alternately with buttermilk.
- Pour batter evenly into the prepared pans.
- Bake at 350°F (175°C) for 30-35 minutes or until a toothpick inserted into the center comes out clean.
- Allow cakes to cool completely on wire racks.
- Prepare the fudge ripple filling by beating softened cream cheese, butter, cornstarch, sweetened condensed milk, egg, vanilla, and cocoa until smooth.
- Spread the fudge filling over the cooled cake layers.
- Prepare the frosting by beating softened butter, vanilla, and cocoa, then gradually add sifted powdered sugar until smooth and fluffy.
- Frost the assembled cake with the chocolate frosting.
- Refrigerate before serving to set the layers.
