Ingredients

  • 1/2 cup shortening
  • 1 1/2 cups sugar
  • 2 large eggs
  • 1 2/3 cups all-purpose flour
  • 2/3 cup cocoa
  • 1 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1 1/2 cups buttermilk
  • 1 Tbsp. vanilla extract
  • 1 tsp. vanilla extract
  • 1 (8 oz.) package cream cheese, softened
  • 2 Tbsp. butter or margarine, softened
  • 1 Tbsp. cornstarch
  • 1 (14 oz.) can sweetened condensed milk
  • 1 large egg
  • 2/3 cup butter, softened
  • 5 3/4 cups sifted powdered sugar

Instructions

  1. Grease 2, 9-inch round cake pans; line with wax paper.
  2. Grease and flour the wax paper; set aside.
  3. Prepare the cake batter by mixing shortening and sugar, then add eggs and vanilla.
  4. Combine flour, cocoa, baking soda, and salt; gradually add to creamed mixture alternately with buttermilk.
  5. Pour batter evenly into the prepared pans.
  6. Bake at 350°F (175°C) for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow cakes to cool completely on wire racks.
  8. Prepare the fudge ripple filling by beating softened cream cheese, butter, cornstarch, sweetened condensed milk, egg, vanilla, and cocoa until smooth.
  9. Spread the fudge filling over the cooled cake layers.
  10. Prepare the frosting by beating softened butter, vanilla, and cocoa, then gradually add sifted powdered sugar until smooth and fluffy.
  11. Frost the assembled cake with the chocolate frosting.
  12. Refrigerate before serving to set the layers.
