Ingredients

  • 1 large cauliflower
  • 2 cups sliced celery
  • 1 teaspoon salt
  • 1/4 cup butter
  • 1/4 cup chopped onion
  • 1/4 cup flour
  • 1 1/4 cups milk
  • 1 tablespoon diced green pepper
  • 1/2 cup grated sharp Cheddar cheese

Instructions

  1. Break cauliflower into small pieces.
  2. Cook cauliflower with celery, uncovered, in boiling salted water for 10 minutes.
  3. Drain, reserving 3/4 cup liquid.
  4. Melt butter in a saucepan.
  5. Add chopped onion; cook until transparent.
  6. Add flour; blend well.
  7. Gradually add milk and reserved liquid, stirring constantly.
  8. Cook until the sauce thickens.
  9. Add diced green pepper to the sauce.
  10. Season with salt and pepper to taste.
  11. Place the cauliflower mixture in a buttered 10 x 13-inch baking dish.
  12. Pour the sauce over the cauliflower.
  13. Sprinkle grated sharp Cheddar cheese on top.
  14. Bake at 375°F for 25 minutes until bubbly and golden.
