Instructions

  1. Mix all vegetables together and place in a shallow 13 x 9 x 2-inch baking dish.
  2. Sprinkle chopped parsley and black pepper over the vegetables.
  3. Preheat oven to 350°F (175°C).
  4. Pour beef bouillon into a small saucepan.
  5. Add vegetable oil, salt, tarragon, and a bay leaf to the saucepan.
  6. Heat to boiling and adjust seasonings to taste.
  7. Pour the seasoned bouillon mixture over the vegetables in the baking dish.
  8. Cover the dish with aluminum foil.
  9. Bake for 1 to 1 1/2 hours or until vegetables are tender and still colorful.
  10. Occasionally stir the vegetables carefully, without lifting the cover for long to preserve color.
