Ingredients

  • 4 cups water
  • 1 tablespoon salt
  • 1 1/2 pounds shrimp, peeled and deveined
  • 3 medium tomatoes, peeled, seeded and chopped
  • 1 medium onion, chopped
  • 1/2 cup tomato juice
  • 2 tablespoons red wine vinegar
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon parsley, snipped
  • 1/4 teaspoon dried, crushed oregano
  • 1/4 teaspoon hot pepper sauce
  • 1 medium green pepper, chopped

Instructions

  1. In a large saucepan, combine water and salt.
  2. Bring to a boil. Add shrimp and simmer 1 to 3 minutes or until shrimp turn pink; drain.
