- 3/4 cup minced celery ⓘ
- 1/2 cup bread crumbs ⓘ
- 1 tablespoon soy sauce ⓘ
- 1/2 teaspoon salt ⓘ
- 2 eggs ⓘ
- 1 clove garlic ⓘ
- 1/2 cup ground toasted pecans or almonds
- 1 (15 1/2 oz) can pineapple chunks, drained ⓘ
- 1/2 cup sugar ⓘ
- 2 tablespoons oil ⓘ
- 1 cup chicken broth ⓘ
- 1/2 cup vinegar ⓘ
- 1 green pepper ⓘ
Instructions
- Combine ground beef, minced celery, bread crumbs, soy sauce, salt, beaten eggs, and minced garlic; shape into 1-inch meatballs.
- Dredge the meatballs in 1/2 cup cornstarch to coat evenly.
- Pour oil into a 13 x 9 x 2-inch pan and heat.
- Add meatballs to the pan and bake at 350°F for 35 to 40 minutes until cooked through.
- Drain the meatballs and set aside.
- In a saucepan, combine pineapple chunks, sugar, chicken broth, and vinegar; bring to a boil.
- Add green pepper strips and cook until tender.
- Serve the meatballs with the pineapple sauce poured over.
