Ingredients

  • 1 lb ground beef
  • 3/4 cup minced celery
  • 1/2 cup bread crumbs
  • 1 tablespoon soy sauce
  • 1/2 teaspoon salt
  • 2 eggs
  • 1 clove garlic
  • 1/2 cup ground toasted pecans or almonds
  • 1 (15 1/2 oz) can pineapple chunks, drained
  • 1/2 cup sugar
  • 2 tablespoons oil
  • 1 cup chicken broth
  • 1/2 cup vinegar
  • 1 green pepper

Instructions

  1. Combine ground beef, minced celery, bread crumbs, soy sauce, salt, beaten eggs, and minced garlic; shape into 1-inch meatballs.
  2. Dredge the meatballs in 1/2 cup cornstarch to coat evenly.
  3. Pour oil into a 13 x 9 x 2-inch pan and heat.
  4. Add meatballs to the pan and bake at 350°F for 35 to 40 minutes until cooked through.
  5. Drain the meatballs and set aside.
  6. In a saucepan, combine pineapple chunks, sugar, chicken broth, and vinegar; bring to a boil.
  7. Add green pepper strips and cook until tender.
  8. Serve the meatballs with the pineapple sauce poured over.
