Ingredients

  • 1 lb. ground beef
  • 1 medium onion, chopped
  • 1 (16 oz.) can whole tomatoes with juice
  • 8 c. water
  • 2 beef flavored bouillon cubes
  • 1 tsp. garlic salt
  • 1/2 to 1 tsp. black pepper
  • 1 bay leaf
  • 1 c. coarsely chopped cabbage
  • 3/4 c. diced celery
  • 1 1/2 tsp. Worcestershire sauce
  • 1 (10 oz.) pkg. frozen mixed vegetables
  • 1 can dark kidney beans, drained

Instructions

  1. Brown the ground beef in a skillet, then drain well and set aside.
  2. In a large pot, combine the tomatoes, water, bouillon cubes, garlic salt, black pepper, bay leaf, cabbage, onion, celery, Worcestershire sauce, and mixed vegetables.
  3. Bring the mixture to a boil, then reduce heat to low or medium and cook for 30 minutes or until vegetables are tender.
  4. Add the drained kidney beans and cooked beef to the soup.
  5. Simmer for an additional 30 minutes, stirring occasionally, until flavors meld and ingredients are heated through.
