Ginny'S Light Melody
A hearty casserole blending savory sausage, fresh vegetables, and melted cheese, perfect for comforting family dinners or casual gatherings with rich, flavorful layers.
Ingredients
- 1 roll Hillshire Farm light Polish kielbasa, sliced quarter size ⓘ
- 2 cups 2% milk ⓘ
- 1 tablespoon plain flour ⓘ
- 1 teaspoon salt ⓘ
- 2 teaspoons pepper ⓘ
- 8 ounces shredded cheese ⓘ
- 1 large onion, sliced half-dollar size ⓘ
- 4 medium potatoes, sliced half-dollar size ⓘ
- 2 carrots, diced ⓘ
- 1 cup celery, diced ⓘ
- 1 cup bell pepper, diced ⓘ
- 1 can English peas or kidney beans
- 2 cups cabbage, sliced ⓘ
- 5 slices light cheese (optional) ⓘ
Instructions
- Preheat oven to 350°F (175°C).
- In a large baking dish, add sliced sausage and milk; bake for 20 minutes.
- Remove from oven and add shredded cheese, flour, salt, and pepper; stir well.
- Bake for an additional 15 to 20 minutes.
- Parboil cabbage, onion, potatoes, carrots, celery, and bell pepper for about 20 minutes.
- Add the parboiled vegetables to the sausage mixture in the baking dish.
- Add some vegetable broth if needed to make room in the dish.
- Mix in the can of English peas or kidney beans.
- Bake for 30 minutes or until vegetables are tender.
- Place light cheese slices on top of the casserole during the last 5 minutes of baking.
