Ingredients

  • 2 cups rolled oats
  • 1 cup whole wheat flour
  • 1 cup shredded carrots
  • 1 teaspoon ground cinnamon
  • 1/2 cup instant nonfat dry milk
  • 1/2 cup maple syrup
  • 1 cup ready-to-eat flake cereal
  • 1 tablespoon baking powder
  • 1/2 cup raisins
  • 1 cup water
  • 2 egg whites
  • 2 tablespoons canola or olive oil

Instructions

  1. In a large bowl, combine the oats, cereal flakes, flour, and baking powder.
  2. Stir in the carrots, raisins, and cinnamon.
  3. In a medium bowl, whisk together the water and dry milk until smooth.
  4. Whisk in the maple syrup, egg whites, and oil.
  5. Pour the wet mixture over the dry ingredients.
  6. Mix until just combined; do not overmix.
  7. Let stand for 10 minutes.
  8. Spray a 9 x 13-inch pan with nonstick spray.
  9. Pour the batter into the prepared pan and spread evenly.
  10. Bake at 350°F (175°C) for 25 to 30 minutes or until firm to touch.
  11. Turn off the oven, leave in with the door ajar, and cool for 2 hours.
