Ingredients

  • 1 lb. butter
  • 9 eggs, separated
  • 3/4 tsp. cloves (ground)
  • 3/4 tsp. mace
  • 1 tsp. baking soda
  • 1 lb. currants
  • 1 lb. pecans
  • 1/2 lb. candied orange peel
  • 1/2 lb. candied cherries
  • 1 lb. candied pineapple
  • 1 lb. light brown sugar
  • 1 lb. flour (all-purpose)
  • 3/4 tsp. nutmeg
  • 2 tsp. cinnamon
  • 1/4 c. milk
  • 1/4 c. milk

Instructions

  1. Wash currants; chop nuts and fruits.
  2. Dredge fruit in half the flour.
  3. Cream butter and brown sugar together.
  4. Add beaten egg yolks to the mixture.
  5. Sift remaining flour with baking soda, cloves, mace, nutmeg, and cinnamon.
  6. Add milk and dry ingredients alternately to the cake batter.
  7. Fold in stiffly beaten egg whites.
  8. Add nuts and fruits; mix thoroughly.
  9. Bake approximately 4 hours at 275°.
