Ingredients

  • 2 eggs
  • 1 tsp. salt
  • 2 tsp. baking soda
  • 2 tsp. vanilla extract
  • 2 cups sugar
  • 1 cup chopped nuts
  • 1 cup raisins
  • 1 1/2 tsp. cinnamon
  • 1/2 tsp. baking powder
  • 2 cups grated zucchini
  • 1 cup salad oil
  • 3 cups flour
  • 1 small can crushed pineapple
  • 3/4 tsp. nutmeg

Instructions

  1. Mix all ingredients in a large bowl.
  2. Pour the batter into 2 large or 4 small well-greased bread pans.
  3. Bake at 325°F for 1 hour until a toothpick inserted in the center comes out clean.
