Granola Pumpkin Bread

Ingredients

  • 1 c. butter, softened
  • 3 c. sugar
  • 3 eggs
  • 1 tsp. vanilla extract
  • 1/2 tsp. orange extract
  • 1 (16 oz.) can pumpkin
  • 1/4 tsp. salt
  • 3 c. sifted flour
  • 1 1/2 tsp. baking powder
  • 1 tsp. soda
  • 1 tsp. each cloves, cinnamon, nutmeg and ginger
  • 1 1/2 c. chopped nuts
  • 1 c. raisins and/or dates
  • 1 1/2 c. granola

Instructions

  1. Cream butter and add sugar; beat in eggs and extract.
  2. Add pumpkin; mix well.
  3. Sift together flour, salt, soda, baking powder and spices.
  4. Blend with pumpkin mixture.
  5. Stir in nuts, raisins and cereal.
  6. Add 1/2 cup orange juice if dough seems too heavy.
  7. Divide into 3 greased and floured 9 x 5 x 3-inch loaf pans.
  8. Bake at 350° , 60 minutes.
  9. Test with toothpick after 50 minutes.
  10. Yields 3 loaves.
