Ingredients

  • 1 small onion, chopped
  • 1 Tbsp. butter or margarine
  • 1 c. frozen loose pack hash brown potatoes
  • 1 c. finely chopped cooked beef
  • 2 Tbsp. snipped parsley
  • 2 tsp. Worcestershire sauce
  • 1/8 tsp. salt
  • 1/2 tsp. pepper
  • 1 (5 1/3 oz.) can evaporated milk
  • 2 tsp. all-purpose flour
  • 1 green pepper, seeded and cut in wedges

Instructions

  1. In a 1-quart casserole, cook chopped onion and butter or margarine covered on high for 1 to 1 1/2 minutes or until onion is tender.
  2. Stir in frozen hash brown potatoes, cooked chopped beef, parsley (if desired), Worcestershire sauce, salt, and pepper.
  3. Cook, covered, on high about 3 minutes or until heated through.
  4. In a small bowl, stir together evaporated milk and flour, then add to the meat mixture.
  5. Cook uncovered on high about 3 minutes or until thickened and bubbly, stirring each minute until the mixture starts to thicken, then stir every 30 seconds.
  6. Cook, uncovered, on high for 1 minute more.
  7. Serve topped with green pepper wedges, if desired.
