Ingredients

  • 1 small onion, chopped
  • 1 cup frozen loose pack hash brown potatoes
  • 1 cup finely chopped cooked beef
  • 2 tablespoons snipped parsley (optional)
  • 2 teaspoons Worcestershire sauce
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 5 ounces can evaporated milk
  • 2 teaspoons all-purpose flour
  • 1 green pepper, seeded and cut into wedges (optional)
  • 1 tablespoon margarine

Instructions

  1. In a microwave-safe bowl, combine the chopped onion, frozen hash brown potatoes, cooked beef, parsley (if using), Worcestershire sauce, salt, and pepper.
  2. Microwave on high for about 5-7 minutes, stirring halfway through, until heated through and potatoes are tender.
  3. Meanwhile, in a small saucepan, combine evaporated milk and flour, cook over medium heat, stirring constantly, until thickened.
  4. Add the milk mixture to the hash brown mixture and stir well to combine.
  5. Melt the margarine in a skillet or microwave-safe dish, then add the hash brown mixture, spreading evenly.
  6. Microwave or cook in the oven until hot and slightly browned on top, about 3-5 minutes.
  7. Serve hot with green pepper wedges on the side or garnish, if desired.
