Ingredients

  • 1 cup margarine
  • 2 cups sugar
  • 4 eggs
  • 1 cup mashed bananas
  • 4 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 can (15 1/4 oz.) crushed pineapple
  • 1 cup flaked coconut

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cream margarine and sugar together in a bowl.
  3. Add eggs one at a time, mixing well after each addition.
  4. Stir in mashed bananas.
  5. Combine flour, baking powder, baking soda, and salt in a separate bowl.
  6. Gradually add dry ingredients to the creamed mixture and mix until smooth.
  7. Fold in crushed pineapple and shredded coconut.
  8. Spoon the batter into two greased and floured 9 x 5 x 3-inch loaf pans.
  9. Bake for 1 hour or until a toothpick inserted into the center comes out clean.
