Ingredients

  • 8 oz. pitted dates, snipped
  • 1 cup raisins
  • 1 1/2 cups boiling water
  • 2 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 2 slightly beaten egg whites
  • 1 teaspoon vanilla
  • 1/2 cup chopped almonds

Instructions

  1. In a medium bowl, combine the pitted dates and raisins.
  2. Pour boiling water over the mixture and set aside to cool slightly.
  3. In a separate bowl, stir together the whole wheat flour, baking soda, and baking powder.
  4. Add the slightly beaten egg whites and vanilla to the cooled fruit mixture and mix well.
  5. Gradually fold the wet ingredients into the dry ingredients until just combined.
  6. Stir in the chopped almonds.
  7. Pour the batter into a greased loaf pan.
  8. Bake at 350°F (175°C) for approximately 45 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow to cool before slicing and serving.
