Ingredients

  • 1/3 c. raisins
  • 1 c. water
  • 1 c. wheat bran
  • 1 c. whole wheat flour
  • 1/8 c. flax seed (optional)
  • 1 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/2 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 2 egg whites
  • 1/4 c. vegetable oil
  • 1/4 c. honey

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a saucepan, combine water and raisins; bring to a boil and simmer for 5 minutes.
  3. Remove from heat and let cool slightly.
  4. In a large bowl, mix wheat bran, whole wheat flour, baking soda, baking powder, cinnamon, and nutmeg.
  5. In a separate bowl, whisk together egg whites, vegetable oil, honey, and the raisin water mixture.
  6. Pour the wet ingredients into the dry ingredients and stir until just combined.
  7. Spoon the batter into greased muffin tins, filling each about 2/3 full.
  8. Bake for 15 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow muffins to cool slightly before removing from the tin and serving.
